The Russian-Ukraine war grinds on. Supermarket prices soar – I bought my usual tin of ILLY ground coffee earlier: the price has jumped from 6 euros to 8 euros …

Have I sent you my recipe for Cincinnati 5 Way Chili?
CINCINNATI 5 WAY CHILI
SERVES TWO TO THREE PORTIONS
1lb ground beef and or turkey
16oz can chopped tomatoes
1 can kidney, black or pinto beans
1/2 Cup water
3 T chili powder
1 t cinnamon
1/2 t cloves
1/2 cup of chopped white onions
1 T garlic powder or chopped fresh garlic to taste
1 T sugar
salt and pepper to taste
1/2 t white vinegar
1 pound spaghetti
1/4 cup shredded longhorn cheddar or similar cheese
brown meat, add tomatoes, water, beans, dry ingredients, vinegar salt and
pepper to taste. stir until all ingredients are blended. season to taste.
I sometimes add seeds from a dry Serrano pepper depending upon courage of
guest diners…:-)
These ingredients are very flexible. you will probably want to add another
tablespoon or two of chili powder. be careful with the cinnamon and cloves.
too much will distort the flavor. same thing with the vinegar. I use it to
bring out other flavors, so add it last and in scant amount at first. sprinkle cheese on top to taste…and maybe a few shakes of Tabasco.
I just bought a pound of ground beef, a big tin of kidney beans, red chillies, celery stalks, a large tin of chopped tomatoes and fresh coriander. Don’t have Tabasco (I have Worcestershire sauce). As for spices, I’ll have to rummage around in the larder. Some recipes add corn. Interesting that you add spaghetti. Some people add rice. In any case, it’s a great dish to make because it lasts an entire weekend and tastes better the next day. I also bought a bottle of red wine (Chinon), for me, not the chilli. Thanks for sharing!
Tobasco is a Louisiana hot sauce whose ingredients include vinegar and cayenne peppers. If you have access to hot peppers that would work. But, DO NOT us worstershire. It has nothing to do with any American style chili.
Yes, I know Tabasco, but you can only find it in certain stores here in Paris, and it costs a bomb.
